Leading this creative charge is Raymond Ma, our esteemed International Head Chef, celebrated for his expertise and inventive approach to Japanese cuisine. Joining the Aqua Restaurant Group in 2008, Chef Raymond has dedicated over twenty years to perfecting the art of sushi making, earning him a distinguished place in our family.

Throughout his journey with us, Chef Raymond has continually redefined the conventions of Japanese culinary art. His groundbreaking invention, Crystal Sushi, stands as a testament to his visionary approach. This unique concoction, first crafted at Shiro Hong Kong, marries traditional sushi rolls with a vibrant array of coloured jelly slices, each infused with distinct flavours such as kimchi, ponzu, and a delicate blend of mint and sake. This innovative technique showcases Chef Raymond’s unparalleled ability to blend different textures and tastes, reimagining the foundations of traditional Japanese dishes.

We are thrilled to announce that from 4th March, Chef Raymond will be bringing his culinary wizardry to London, joining us at Aqua Kyoto. For a limited time of two weeks, he will be spearheading our kitchen, presenting a special menu that features exclusive creations like his signature Ama Ebi with Shichimi Togarashi Ponzi Crystal Roll and the exquisite Flounder Fin and Wasabi Miso Maki.
